Here you are with an excellent way to use up all that summer zucchini that has been doing nothing but gaining lbs in your garden. And don't forget the cheese. :D
DOUBLE recipe for 4 or more:
1 small onion, sliced thinly
1 TBSP olive/veg oil
1 med. zucchini, cubed
2 plum or flavorful tomatoes, peeled, quartered & chopped (peeled not necessary if "fresh")
2 TBSP chopped green pepper
1 garlic clove, minced
1/4 tsp salt
1/8 tsp pepper
1TBSP grated Parmesan cheese (mozzarella might work fine, but add a splash of red wine vinegar to recipe to develop flavor?)
2 tsp minced fresh parsley
**personally I add fresh basil, only at the end---very nice---but I really like basil's flavor
Directions: In skillet, saute onion in oil until tender . Add the zucchini, tomatoes, green pepper, garlic, salt and pepper (and basil toward end). Reduce heat; simmer, uncovered for 8-10 min or until vegetables are tender. Sprinkle with parmesan cheese and parsley.
